Bliss Balls are "the bomb"!

I have had a few requests to repost my tasty Bliss Ball recipes in the past few weeks. I know it can be hard to be a healthy snacker, but it can be done. It prompted me to make a couple of batches of these sweet, healthy, nutritious treats for myself. Let me know if you make them! ...and which recipe you like better! Be brave and experiment with other nutritious ingredients and don't forget, you can freeze these little delights.

Lemon Tumeric Bliss Balls

Ingredients:

12 Medjool dates

1 cup rolled oats

1/2 cup almonds

1 Tablespoon chia seeds

4 Tablespoons fresh lemon juice

1 teaspoon lemon zest

1 teaspoon vanilla extract

1 teaspoon ground turmeric powder

1/2 cup shredded coconut

Instructions:

1. Remove pits from dates, and soak them in warm water for several minutes. Once they are soft, place in food processor and save the "date water".

2. Add all other ingredients, EXCEPT coconut, and blend until mixture becomes a doughy consistency. Chia seeds will hydrate. Add a little "date water" if the consistency is too dry.

3. Rolls mixture into small 2-bite sized balls. Roll the balls in shredded coconut.

4. Store in airtight container. (Can be frozen)
